The there is an Italian pasta dish that uses Eggs, Bacon (Pancetta), and cheese, so why not on a pizza? Spaghetti alla Carbonara is delicious so I’ll call this breakfast dish Pizza alla Carbonara.

One of the very first things that we do when traveling to London is to have the Full English Breakfast at the Euro Coffee House near Grovesnor Square. They serve a better breakfast than this photo with amazing streaky bacon and fried potatoes. You wonder who thought to include beans in a morning meal, but I’m not complaining.
We love Choucroute Garnie. Our favorite meal when in Paris is the Choucroute Garnie at Brasserie Lipp. When we make this dish at home, we follow the recipe of Julia Child (although not too closely). The secret is to rinse most of the salt and sourness from the sauerkraut. Then, it is enhanced with the addition of white wine, chicken stock and juniper berries.
I just love it when any bread puffs up just before serving. I’ve cooked pita bread in a skillet with this result. A pizza dough will puff up when you bake it without toppings. Even a flour tortilla can balloon when baked or fried. The results just float to the table.
