This dish is amazing. The smoky crunch of bacon with the al dente pasta shells and the creamy cheese. This is inspired by spaghetti carbonara which uses pancetta instead of bacon and an egg-based sauce sprinkled with Parmesan cheese.
Kim Chi Fried Rice is the ultimate comfort food at our house. We don’t have a standard recipe, but here is a good fried rice recipe to try. Our dish begins with leftovers. Any protein will do, but ham, pork, chicken, or turkey are good choices. In Hawaii, Spam is the meat of choice for Korean Fried Rice. The egg on top of our rice is beaten with water then fried paper thin like a crepe. It covers the mound of rice like a blanket. Ketchup is the condiment favored by kids.
I cannot believe the reaction to my posting of this photo on Imgur and Reddit. It is not even close to Valentine’s Day, but the response was amazing. A quarter of a million views on Imgur and 2,500 up votes on Reddit. People can’t get enough bacon or Bon Jovi lyrics apparently. I included the recipe for these clever toast cups.
Our new favorite preparation is this quick and easy Fume. Unlike the classic French, we serve the fish in its poaching liquid giving it an almost Bouillabaisse or Cioppino style to it. We can get this dish to the table in less than 30 minutes which qualifies it for a weeknight supper. Add a crouton or crustini with pesto for dipping (as in our photo). May also be served over rice. For a variation, toss in some shrimp or scallops at the same time as the fish.

Classic French poaching technique (Fume) for delicate white fish
1 1/2 pounds white fish Cod works great
1 Tablespoons Butter unsalted. If salted, reduce the added salt
1 Stalk Celery diced
1 whole Carrot diced
1/2 Whole Yellow Onion sliced
3 Cloves Garlic Minced
1/2 Teaspoon herb de Provence Dried
1/4 Teaspoon Red Pepper Flakes
1 Pinch Sea Salt
4 Grinds Black Pepper Fresh
1/2 Cup White Wine Dry – good enough to drink
1/2 Cup Chicken Stock Fresh or canned
1/2 Cup Italian flat-leaf parsley chopped
1 whole tomato chopped
This is our kind of appetizer. None of those limp carrot sticks with Greek yoghurt dip. The Croque Monsieur party puffs would be a real crowd pleaser.
