Kim Chi Fried Rice is the ultimate comfort food at our house. We don’t have a standard recipe, but here is a good fried rice recipe to try. Our dish begins with leftovers. Any protein will do, but ham, pork, chicken, or turkey are good choices. In Hawaii, Spam is the meat of choice for Korean Fried Rice. The egg on top of our rice is beaten with water then fried paper thin like a crepe. It covers the mound of rice like a blanket. Ketchup is the condiment favored by kids.
